Savoury Pancakes Chicken and leek

These are excellent comfort food! Instead of simply dousing them with lemon and sugar for dessert, you can make a whole meal out of pancakes. All you need is ingredients for pancakes a la Delia or whoever. Cook some chicken and leeks (or whatever you fancy) and make a roux. Mix the two together and spread inside one of your ready made pancakes. make several, put in a baking dish, smother with cheese and cook in the over - you can then slice into them lasagne style once done (mince is also a nice filling, as are roasted veg... or anything that takes your fancy!
