Chef has broad aspirations - should keep things simpler. Should visit other similar pub-restaurants to get a handle on what others do better. Sometimes not sure what he thinks he's doing. Needs a good manager - owner out of his depth a bit.
General Comments
It's a fab location and this one time bar has had a fab make-over (expensive too), but the owner of The Dillwyn Arms in Pontardawe isn't a chef, which is what lets it down. He can cook, but his "imaginative" dishes are dodgy (very much to his taste but not necessarily to yours), and the prices suggest better cuts of meat than you get. Service is always excellent, but there's always a nasty aftertaste when the bill comes - he's charging for quality but doesn't quite deliver. Close, but no cigar. Try it and see what you think. You'll enjoy, but maybe not quite as much as you'd hope. I wish them well. They need and deserve it.
