It's Pancake day next week, Shrove Tuesday but whats the best type of Pancake?

Does anyone have any pancake recipes they could share with us?

Personally I keep it simple, just sugar and ice cream. Maybe some chocolate but definitely no banana!

    Anyone any thoughts?

You might give this a try.
Everybody has a special recipe for pancake batter and you can use that as your base for this enhanced treat. To that batter mix in small, semi-sweet chocolate chips (amount depends on the amount of batter. For most family sized recipes a half to three quarters of a cup is adequate.) then prepare pancakes as you normally would. What makes this recipe special is the topping of whipped cinnamon cream prepared as follows.

    1 cup whipping cream
    1/4 cup confectioners sugar
    1/2 teaspoon ground cinnamon

In a medium bowl, beat cream until thickened. Gradually add in confectioners' sugar and cinnamon, mixing until stiff. Cover and chill in refridgerator for at least half an hour.

Top cooked pancakes with a dollop of cinnamon cream mixture and serve with real maple syrup.
