Good Points: Name protected Unpasteurized Merino sheep's milk Aged six months or more Sweet, herbaceous, grassy flavor
General comments: Serpa, a raw sheep's milk cheese is from Portugal's Alenteja region. It is made with cardoon thistle rather rennet. Aged for six months and name protected (DOP), this cheese is sweet and herbaceous. The straw colored rind is wrapped in cloth at small artisanal dairies.
