My fryer pan is sticking. I have cooked with it for many years but now it is sticking. Could someone tell me why?

The nonstick surface is worn out that's all, usually it starts by bubbling then it flakes away, I've used 2 pots in a commercial environment used twice a day for simmering white sauce 30min all up and these have only lasted 3/4 months before sticking.
