The Bellini is a lovely mix of Champagne or Sparkling Wine and Peach Juice. This is a nice aperitif which you will often find served at weddings or brunches as it's tasy and fizzy but not too strong to drink early in the day. It always feels classy and festive and refreshing, rather than hitting you like a train and inspiring you to dance on tables. Yum!
