I have inherited this machine - and it came without a manual, so I am working blind and largely by experiment. I have always handmade my bread before, using an Aga, so the idea of using quick acting yeast instead of ordinary dried yeast is new to me. I have made several loaves which have collapsed at the top, although the rest of the loaf and its texture seem fine. Is there a rule which says you should not open the lid whilst it's working? I would be grateful for some tips please!
I find the whole thing a bit large and clumsy, but it is nice not to have to hand-knead the loaf in the early stages.
