Good Points

Clean finish, intense flavor, bright and robust body, well balanced, with very complex aroma (my favorite part). Strong, but not too oily and having an agreeable texture that will stand up to repeat cups. Suitably accompanies a wide variety of lunch-type foods without offence.


Bad Points

If the beans are finely ground and brewed by either drip or press, the more delicate notes of the character will be overwhelmed by the intense flavor. Brew carefully to avoid overpowering flavor.


General Comments

Works much better in a press than a drip. The finer points of coffee's character (sufficiently complex as to be rather mysterious, especially the aroma) are best revealed when brewed carefully by a press, and must be *coarse-ground,* using slightly more coffee to compensate for larger grounds. (I do not use a grinder for this but prefer to grind by hand to insure proper consistency.) This coffee is best for midday and not recommended after dinner (breakfast for daredevils). On the positive side, if only chlorinated tap water is available for brewing (yuck!) then the intense flavor will adequately mask inferior water without being unsavory or too strong; better water is, of course, preferred. Overall a very good midday coffee with unique characteristics although a bit on the pricey side, however, bargains can be found. I usually keep a quantity of whole beans on-hand for a change of pace.
