A super low fat healthy vegetable dish. Goes brilliant with your Christmas dinner.

General Comments
This is a very simple vegetable dish to go with your Christmas dinner or any roast.
You need:-
4 tbsp olive or vegetable oil (olive is healthier)
6 medium carrots, trim off ends
4 small parsnips, ends trimmed
4 small onions
1 small swede, cut into thick wedges
large knob of butter to serve
Heat oven to 200c. Pour 3 tbsp of the oil into a roasting tin and scatter and roll the veg in the oil and season to taste. Drizzle with remaining oil.
Roast the veg for 45-55 mins until tender and golden brown. Brush with butter before serving.
Delicious and healthy. Serves about six people.
