Good Points

Beautiful engineering, consistent even temperature, lids fit perfectly so can keep things warm well e.g. creamed potato. If you want to make real custard just heat the cream/milk in the pan, add to the eggs, return mixture to the pan and turn off heat. The residual heat of the pan will cook the custard to perfection, with no curdling.


Bad Points

They certainly are expensive, but well worth it. The Le Creuset casseroles I bought at the same time have had it, but the Cuisinox pans are as good as new.


General Comments

I have had my Cuisinox Elysee pans for more than 20 years, and have been a professional cook so they have taken a battering, but they are still in great nick. Perhaps they don't stack, but I have never had a problem with the handles getting hot, even when cooking on gas.

You only need to buy Cuisinox in the size in which you are going to be cooking sauces, casseroles etc. You can use a much cheaper range for steaming veg etc.

I am about to buy more as a wedding present.
