“Poor Service”

My flight was scheduled to leave JFK at 10:40 AM on Jan 8th 2014, but it did not end up leaving until 12:15 PM. All this while, there was no update from the crew at the gate or a courtesy apology from the captain for the delayed departure. It took over 2 hours to receive my meals once we were airborne and another 1.5 hours before the stewardess could collect our empty trays. I activated the crew help signal and did not receive any attention for at least 45 minutes. When I brought the issue of poor service to a crew member, they said the crew was overloaded and working with reduced staff. I was surprised to hear that Emirates would fly an A380 with over 350 passengers with reduced staff.
On my way back from Dubai to JFK on Jan 22nd, 2014, (EK 201), I encountered another episode of very poor service. Again, it took over 1.5 hours to deliver our food and we did not get our preferred options. The crew said the Airline only gives them limited quantities and asks them to work with it. The crew even mentioned they were giving away their food to please the passengers. I don’t believe this should be the level of service from a well-known Airline. When I brought this issue with the crew supervisor he asked me to specifically write my comments on this poor service so that it gets highlighted to the management. He agreed the service was poor and it was up to the management to fix this issue.
